Sweet is sweet, right? No! Our palates can distinguish between 4000 different flavors and we can tell the difference between simple syrup and lush honey. We added natural sweeteners because they enhance and pull together the other flavors. That isn’t possible with basic sugar. Atsby uses raw summer honey to amplify Amberthorn with a floral and slightly citrusy profile. For Armadillo Cake, we wanted a dark, earthy flavor balanced with fruit, botanicals and spices. Our searches led us to India, with its dark Muscovado. When spun into a natural caramel its tawny nature melds beautifully with berry notes.
